One thing that makes a huge difference is the fish you use. Please buy the freshest sardine fish you can find because freshness is everything. The fresher the fish, the better your homemade sardines will taste. If you use fish that has been sitting in the market or freezer for too long, it can leave a slightly bitter aftertaste, and that’s something you definitely want to avoid. When it comes to seasoning, keep it simple and use whatever seasoning you enjoy because there’s no strict rule. For the oil, I specifically used soybean oil because that’s what many commercial sardine brands, including Titus, commonly use. You can also use vegetable oil if you prefer. One thing I don’t recommend is extra virgin olive oil because its strong flavor can leave a bitter taste and completely change the final result. Sticking with soybean or vegetable oil will give you the best outcome. Homemade sardines won’t taste exactly like the canned ones you’re used to, but they’re healthier, preservative-free, and made with ingredients you trust. For me, that’s more than enough reason to keep making them. #HomemadeSardines #FoodStoryCuisine
