If you want that rich, flavorful, beautifully colored smoky jollof rice, here are a few tips that always work for me. 1. Start with a good pepper base. Your pepper base should contain more shombo than tomatoes, a few habanero peppers, and onions. You can also add tatase if you like. If you cannot smoke your pepper mix, it's better to steam or boil it. Wash your pepper mix and cook it with a little bay leaf and rosemary. Once it's cooked, allow it to cool, blend, and store it in your freezer. You can use it anytime you want to make jollof rice, beans, or other dishes. 2. Fry your pepper base properly. Please, don't skip this step. Fry your pepper base until the oil starts floating on top. Season it properly, but don't overdo the seasoning. 3. Add your rice and let it simmer gently. Add your washed or parboiled rice and mix everything properly. Allow the rice to simmer gently in the pepper base, almost like you're steaming the rice in the sauce. 4. Add good-quality meat stock. This is very important. Your meat stock should be rich, well-seasoned, and flavorful. Add your stock, then taste the entire pot and adjust the seasoning if necessary. At this stage, you don't need too much seasoning because your pepper base and meat stock should already be flavorful. 5. Get your water level right. Don't add too much water. You only need enough liquid to cook and steam the rice properly. A little above the level of the rice is usually enough, depending on the type of rice you're using. 6. Keep your seasoning mild. With a good pepper base, you don't need red food coloring or unnecessary seasonings just to give your jollof rice color. Your pepper base should be the source of that beautiful red color. Ginger, garlic, thyme, curry, bay leaf, and other mild seasonings are enough. Don't over-season your rice. 7. Let it cook gently. Cover your pot and allow the rice to cook properly over low to medium heat. Once the rice is fully cooked, turn off the heat and cover the pot for another 15 to 20 minutes. This allows the rice to absorb any excess moisture and gives you that perfect, fluffy texture. After that, open your pot, gently stir, and there you have it. Your perfectly cooked, beautifully colored, flavorful smoky jollof rice is ready. Try these tips and thank me later Do you have any other jollof rice tips? Share them in the comments.
